Thumbs up Pumpkin Chocolate Chip Cookies

Here's a recipe for melt-in-your-mouth yumminess

Pumpkin Chocolate Chip Cookies

1c shortening
1 c sugar
1 large egg
1 c canned pumpkin (or fresh pureed)
2 c flour
1 t baking soda
1 t baking powder
1/2 t salt
1 t cinnamon
1 t vanilla
1 c chocolate chips
1/2 c chopped pecans (optional)

Beat shortening at medium speed with an electric mixer until fluffy; gradually add sugar, beating well. Add egg and pumpkin, mixing well. Combine flour & next 4 ingredients. Add to pumpkin mixture. Stir in vanilla (which I always do with the other liquid ingreds), chocolate chips and pecans. Drop by Tablespoonfuls onto lightly greased cookie sheet. Bake at 350°F (175°C) for 13 minutes.


Or, for the metric measurements:
237 ml shortening
237 ml sugar
1 large egg
240 ml canned pumpkin (or fresh pureed)
473 ml flour
5 ml baking soda
5 mil baking powder
2.5 ml (how do you measure that?) salt
5 ml cinnamon
5 ml vanilla
237 ml chocolate chips
120 ml chopped pecans (optional)

MMnmmmmmm Yummy, will definitely have a go at that sounds delicious, the canarians eat loads of pumpkins so this recipe will go down really well with our neighbours......I'll let you know how it turns out! thanks for sharing xxx

Hi
They sound great, but pumpkin isn't for me i'm afriad, have you tried them without it? and I'm looking for a receipe for soft drop cookies, where they flatten themselves and stay melt in the mouth soft.. yum yum. x

I've never made them without the pumpkin, as that is the melt-in-your-mouth factor. You could try them with shredded zucchini perhaps?
